While I am not a big fan of the sauce (i generally stay away from cream sauce as they make me fat lol), you can't go wrong with this one. The problem with the other BTC dishes is that there is a chance that they may turn out overcooked (in the case of red meats). Well frankly, for fish, even if it's overcooked, it's still edible per se.
One would think that I would get bored of this dish after having it so many times, but it is by far my favorite (and this coming from someone who otherwise far prefers meat to fish). The last time I had this was on a flight less than a week prior, which speaks to how great it is. I've yet to find a restaurant that serves a comparable Chilean Seabass.
While I like to try different new options on different routes, sometimes I just want to ensure I'll have a great meal and not gamble. In such cases, Grilled Chilean Seabass is the #1 choice. I think this particular meal (lunch) has been the best rendition of the dish so far.
I booked the cook for Grilled Chilean Seabass on my first ever flight on SQ Business Class and it has been my go-to choice ever since. Over dozens of subsequent orders it hasn't failed me once!
I ordered this dish after hearing and reading great reviews on it. To my disappointment, I was served was a dish that was below par. The fish was sinewy, dry (think over-microwaved meat) and bland. The creamy seafood sauce /chowder was the dish's saving grace. Even that wasn't fantastic; mediocre at most. Perhaps all the good reviews have gotten my expectations way too high so to be fair, I'll give it another shot the next time.
